Chicken Casserole
Ingredients:
1 large onion, finely chopped
2-4 jalapeno peppers,
finely chopped
1 cup butter, melted
2 15 ounce cans cream
of chicken soup
1 15 ounce can
evaporated milk
12 corn tortillas
three large chicken
breasts, cooked and shredded
1 pound sharp cheddar
cheese, grated
Casserole:
Combine melted butter,
onions and peppers and simmer for about 10 minutes or until very soft. Add the soup and evaporated milk and bring
to a boil. Stir frequently while
reducing heat until mixture has thickened.
In casserole dish,
pour some of soup mixture into bottom of the dish. Cut tortillas into 1/6ths and layer half of the tortillas on top
of the soup mixture. Follow by placing
1/3 of the chicken on top of this and repeat layers until all ingredients have
been used. Top with remainder of the
soup mixture. Sprinkle cheddar cheese
over the entire mixture. Bake at 350
degrees for about 15 or 20 minutes or until bubbling. Let cool for 10 minutes prior to serving.
*** This is wonderful mid-winter comfort food
and any leftovers will freeze nicely.
