Single Leaf Winery 7480 Fairplay Road Somerset, California 95684 530-620-3545 Chicken Tortilla Soup 1 package dried black beans 6 quarts chicken broth 4 boneless, skinless chicken breasts 12 ounces frozen corn 2-3 large, cut up tomatoes 1 bunch cilantro, leaves only, shredded corn tortilla chips Place black beans in a large cooking pot and cover with water. Bring to a boil, continuously replacing with more water as it boils off. This process will take about one hour. Drain all water from the beans when they are al dente. (Beans can be soaked overnight and drained but don't have the same intensity of flavor.) Microwave chicken breasts for about 5 minutes, allow to cool and shred. Combine the drained black beans, chicken broth, corn, tomatoes, cilantro and chicken breasts and bring to a boil. Reduce heat and simmer for about one half hour before serving. Place tortilla chip into individual bowls and pour soup over the chips. Garnish with more cilantro.
