A “Grape” Summer Appetizer

 

Ingredients:

“Grapes”-

2 cups pecan chips

8 ounces cream cheese, room temperature

4-8 ounces Bleu cheese

¼ cup whipping cream

1 pound red or green grapes

“Vine”-

4 ounces sliced dry salami

4 ounces sliced roast beef

2-3 green onions

Small jar of hot peppers

Garden Vegetable or

Green Onion and Chive soft cream cheese

Grape Leaves for decoration

 

Bake the pecan chips in a 350 degree oven, stirring frequently, until they are fragrant (about 10 minutes).  Cool and set aside. (These can be baked ahead of time and will last several months if tightly covered.)   Combine the cream cheese, bleu cheese, and whipping cream and mix well.

Coat each grape with the cream cheese mixture and then roll in the pecan chips.  Place grapes on the top of a large platter in the shape of a couple of clusters of grapes.

 

Spread each piece of sliced meat with about a tablespoon of the flavored cream cheese.  Place either a green onion or a pepper in the corner of each slice and roll tightly.  Arrange the rolled slices on the lower portion of the platter (vertically stacking slices about an inch wide) as though they were the truck of the grapevine.

 

Place several grape leaves behind the grapes and serve.  (Artificial grape leaves can be purchased in any gourmet kitchen shop and add an elegant appearance to the finished appetizer.)

 

This is a wonderful summertime appetizer to serve prior to any grilled meal.
