1 2-3 pound flank steak,
well trimmed
1/2 cup Olive oil
1/4 cup Balsamic vinegar
1 Tablespoon curry powder
(mild)
1 Tablespoon paprika
Ground black pepper, to
taste
4 Tablespoons capers
1 small piece of ginger,
finely diced
2-3 limes
1-2 cups (Single Leaf!)
Chardonnay
Combine the olive oil and
balsamic vinegar and rub well into the steak.
Place steak in a 9 x 11 pan. Mix
together the curry powder, paprika, black pepper and rub mixture over
steak. Sprinkle one side of steak with
capers and ginger and then repeat on other side. Cut the limes into halves and squeeze the lime juice over the
meat. Leave lime halves in the
pan. Add 1 – 2 cups of Chardonnay and
marinate overnight.
Grill marinated steak over
very hot coals for 3-5 minutes per side for medium rare. To serve, thinly slice across the grain.
