Onion-Cheese Muffins

 

 

 

3 ½ cups flour

4 Tbls. baking powder

2 teaspoons salt

1 cup shredded cheddar cheese

½ cup chopped green onions

2 Tbls. chopped fresh parsley

1 teaspoon celery seed

½ teaspoon Italian seasoning

1 ¼ cups milk

2 eggs

¼ cup vegetable oil

1/3 cup shredded parmesan cheese

 

 

Preheat oven to 375 degrees.  Lightly grease muffin cups.  Sift dry ingredients together (flour, baking powder and salt).  Add cheddar cheese, green onion, parsley, celery seed and Italian seasoning to dry ingredients.  In another bowl, beat together the milk, eggs and oil to blend.  Stir into dry ingredients until evenly moist (over mixing will make muffins tough).  Spoon into muffin cups, about ¾ full and sprinkle with parmesan cheese.  Bake for about 30 minutes or until golden brown.  Serve warm.
