Single Leaf Moussaka

 

Meat Sauce:

1 cup finely chopped onion

1 clove garlic, crushed

2 tablespoons butter

1 pound ground fresh California Lamb

1 8 ounce can tomato sauce

1 tablespoon Italian herbs

 

Cream Sauce:

2 tablespoons butter

2 tablespoons flour

2 cups milk

2 eggs

 

2 tablespoons melted butter

Thinly sliced red potatoes

2 cups Parmesan cheese

 

Combine onion, garlic and butter.  Sauté for several minutes until onions are soft.  Add ground lamb, tomato sauce and Italian herbs.  Simmer for 15 minutes.

Melt butter and add flour.  Slowly stir in milk.  Let come to a boil and stir until thickened.  Let cool and add beaten eggs.

Pour melted butter over red potatoes and broil until lightly browned.

Layer potatoes over bottom of a 9x13 pan.  Cover with meat sauce and sprinkle with cheese.  Repeat until all potatoes and meat sauce are used.  Pour cream sauce over the top and sprinkle with remaining cheese.

 

Bake at 350 degrees for 35-40 minutes.  Cut in squares to serve.
