Smokey Tomatillo Sauce with Grilled Chicken Breasts

 

Smokey Tomatillo Sauce:

1 12 ounce can whole tomatillos or 10 fresh whole tomatillos

2 Tablespoons olive oil

2 Tablespoons flour

½ cup Thick Crème***

¼ cup heavy whipping cream

1 Teaspoon salt

 

Chicken Breasts:

 4 chicken breasts, bone-in, skin on

 olive oil

 1 to 2 limes

Salt and pepper to taste

 

Prepare barbeque grill to hot, about 350 degrees.  Combine oil and juice of limes and brush over chicken breasts.  Grill over high heat for about 20 to 25 minutes, turning once.

 

While chicken breasts are grilling, place tomatillos in vegetable grilling basket and also place on grill.  Cook tomatillos until slightly turning black on all sides.  Remove and cool.

 

In a saucepan, heat olive oil and whisk in flour to form a paste.  Gradually mix in the thick cream and heavy cream until smooth.  Taste and season with salt. 

 

Put grilled tomatillos into a food processor and blend.  Gently add processed tomatillos into the cream mixture.  Serve warm over the cooked chicken breasts.

 

***Thick cream is made with 1 cup heavy whipping cream, 2 teaspoons sour cream, placed in a warm spot (80 to 90 degrees) for 12 to 24 hours.  Refrigerate for at least 4 hours before using to complete the thickening.
