Tomato-Basil Bruchetta

 

1 package Sun-dried tomato bruchetta slices**

2-3 Large, ripe tomatoes

One bunch of basil, cleaned and cut into strips

Extra virgin olive oil, preferably fruity

Shaved Parmesan Cheese, about 1 cup

 

Clean and cut the tomatoes into a small dice, removing all liquid.  Place cut basil with the tomatoes and pour about enough olive oil over the mixture (up to four tablespoons) to make a “soupy” type mixture.  Let rest in refrigerator for at least four hours.

 

Place bruchetta slices on a non- stick surface pan.  Place a teaspoon of tomato mixture or more over each piece. 

 

Cook for about 3 minutes and then sprinkle with the cheese.  Place briefly under the broiler and then let set for up to 15 minutes; best when served warm.***

 

** Using prepackaged bruchetta cuts the time for making up to one half.  If you use dried bread instead, slice thinly into rounds, brush with butter and sprinkle with garlic salt.

***Caution, these DO get soggy if left for long time periods after they have been cooked.
