Tortellini Soup

 

 

 

12 cups chicken broth

3 teaspoons Italian seasoning

2 teaspoons garlic powder

1 cup thinly sliced carrots

28 ounces stewed tomatoes

8 ounces tortellini-any kind

 

 

In large soup pot mix broth, Italian seasoning, garlic powder, carrots and tomatoes.  Over medium high heat, bring to boil.  Cook until carrots are soft.  about 20 minutes.  Add tortellini and reduce heat to low.  Cook about 15 minutes (depending on whether dry, frozen or fresh tortellini is used) or until tortellini is al dente but not overcooked.

 

Makes 6 servings but can easily be doubled or tripled (or more!) for a crowd!
